Baked Brie Bowl


Here’s the perfect appetizer for your next holiday or New Year’s Eve party.  It’s warm, melty Brie cheese, baked in a bread bowl and served with a swirl of fig jam and capers. It’s gooey, cheesy, sweet, and savory all at the same time. Prep time is quick and we guarantee your guests will be coming back for more!

Brie is a semi-soft melting cheese made from cow’s milk. It has a white rind that’s completely edible. Brie is often paired with fruits, jams, and other ingredients which complement its buttery, mild flavor.

For this recipe,  you’ll need a small wheel [about 8 oz] of Brie. The rind should look fresh and white; avoid those with any slimy, or brown spots. You need a round bread boule with a sturdy crust. Be sure your bread is wider than the wheel of Brie, so you have room to fit the Brie into the bread and have enough space on the sides for the bread slices.

You'll serve this baked brie bowl with the leftover chunks of bread along with some sturdy crackers or apple slices.

Pro tips for easy prep

Fig jam is a classic ingredient for baked brie, but apricot, cherry, pear, apple, and raspberry jam are all wonderful options. A pinch of thyme or rosemary adds a hint of savory flavor, and acts as a nice garnish. Top it all off with a drizzle of honey for more sweetness and visual appeal.

This dish is best served hot out of the oven. Eventually, the jam's colors will bleed into the cheese and the dish won’t appear as neat and appetizing the next day, but it will still taste great. To reheat your Brie, warm it back up in the oven at 350 degrees for 15 minutes or so until it's nice and melty again.

Baked Brie in a Bread Bowl

Yield: 6 servings

INGREDIENTS

  • 1 sourdough boule or other round loaf, about 8 inches in diameter
  • 1 (12-ounce) wheel of Brie, at room temperature
  • 1 tablespoon extra-virgin olive oil
  • 1/4 cup fig jam
  • 1/4 cup capers
  • 1/4 cup chopped candied walnuts or other nuts
  • 1-2 tablespoons honey, for drizzling (optional)
  • 1/2 teaspoon thyme leaves (optional)

 

DIRECTIONS

  1. Preheat oven to 425°F. Use a serrated knife to cut across the top dome of the bread, about 5 to 6 inches across, leaving a 1/2 inch perimeter of bread on all sides. Scoop out the center of the bread with a spoon or your fingers, being careful not to puncture the bottom and leaving the bread around the edges intact. Cut 1/2-inch slices around the edges of the bread, being sure to not cut all the way through to the bottom. Brush the top and sides of the bread with the olive oil.

  2. Score the Brie across the top through the rind but not too deep into the cheese. Place the Brie inside the bread bowl. Bake until the Brie is melted and the bread is toasted, about 20 minutes.

  3. Remove Brie bread bowl from the oven, stir in fig jam and capers, top with candied nuts and serve immediately with apple slices. Spoon jam, jelly, or preserves of choice over the top of Brie and spread toward the edges. Sprinkle with nuts of choice and drizzle with honey, if using.

  4. Bake about 20 minutes until the Brie is melted and the bread is toasted. Remove Brie bread bowl from the oven, stir in fig jam and capers, top with candied nuts and serve immediately with crackers or apple slices.
