Thai Turkey Lettuce Wraps


Sure, lettuce is a staple in salads. But a whole, uncut lettuce leaf is also the perfect base for some creative, low carb meals. So next time you’re hankering for wraps, why not ditch the bread for these light, Thai-inspired lettuce wraps? Lean ground turkey is flavored with mint and lime juice, then accompanied by crunchy water chestnuts and a sprinkle of fresh cilantro. A squirt of Sriracha adds a nice kick.

They’re quick and simple—but don’t taste it or look it! 

We used lean ground turkey for the lower fat content but you can also swap out for ground pork, chicken, or beef. Water chestnuts are optional but add nice crunch. And feel free to experiment with your own variations. Shredded carrot and chopped mushrooms make excellent fillers and add even more nutrition.

 

Why We Love These Ingredients

Ground turkey is an excellent source of lean protein, which keeps you full for longer periods and provides energy throughout the day. It also contains Vitamin B12, which supports red blood cell formation as well as zinc and iron for immune function. Turkey also provides a good dose of selenium, an antioxidant mineral that can protect against chronic disease.

You may also know that turkey contains an amino acid called tryptophan. Tryptophan boosts serotonin, the “feel good” chemical in your brain which can lead to better sleep quality and improved focus and concentration levels. Another bonus? Tryptophan also keeps joints flexible and pain free.

Bibb lettuce, also known as Boston or butter lettuce contains more folate, iron, and potassium than iceberg or leaf lettuce. Bibb lettuce also contains high levels of Vitamin K, which is crucial for strong, dense bones. And yes, it has gut benefits too, thanks to a high fiber and water content.

Water chestnuts are gut friendly, fiber rich and very hydrating—everything you need for a smooth digestive tract! They contain potassium, which is important for muscle and nerve function as well as healthy blood pressure levels. They are also a great source of immune-boosting Vitamin C.

 

Pro Tips to Get You Started

We suggest using bibb lettuce for your wraps. They have tender, soft leaves with a delicately sweet flavor, and each leaf is in a perfect cup shape.  

Have any leftovers? Lucky you! Put the extra filling in an airtight container, and it will last for several days in the refrigerator. Don’t store the wraps already assembled as the turkey filling will make the leaves soggy.

You can also freeze the turkey mixture for 3 months. Let the filling thaw completely in the refrigerator before reheating in a skillet or microwave. Simply grab some fresh lettuce leaves and you have a quick and easy meal.

Thai Turkey Lettuce Wraps

  • 2  medium bell peppers, seeded and chopped
  • 1 TBSP  vegetable oil
  • 3 cloves garlic, chopped
  • 1 lb. ground turkey
  • 2 TBSP fish sauce
  • 1 TBSP low-sodium soy sauce
  • 1 8oz can diced water chestnuts, drained
  • 4 green onions, thinly sliced
  • 1/4 c. packed fresh cilantro, chopped
  • 1/4 c. packed fresh mint leaves, chopped
  • 3 TBSP lime juice
  • 1/2 tsp sugar
  • pinch of salt
  • lettuce leaves
  • sriracha hot sauce
  1. In 12-inch skillet on medium-high, cook bell peppers in vegetable oil for 3 minutes. Add garlic; cook 30 seconds. Add ground turkey and fish sauce. Season with a dash of salt. Cook for 5 minutes, breaking up meat.

  2. Add the water chestnuts, green onions, cilantro, mint leaves, lime juice and sugar to the turkey mixture and stir until well blended. Remove from heat.

  3. Spoon about a ¼ cup of the turkey mixture onto each lettuce leaf and drizzle with a dash of Sriracha sauce. Enjoy!
