Breakfast Grilled Cheese
Here’s an Instagram-Worthy spin on a classic favorite that’s perfect for breakfast, lunch and brunch.
INGREDIENTS
- 2-3 bacon slices
- ½ tbsp butter [plus more to spread on sandwiches]
- 1 egg
- 2 slices artisan bread
- ¼ cup shredded cheddar cheese
- ½ tomato, sliced
- ½ avocado, sliced
- Salt and pepper to taste
- 1 slice Swiss or mozzarella cheese
INSTRUCTIONS
- Cook the bacon and drain on a paper towel-lined plate. Wipe out pan but leave about ½ tsp of bacon grease.
- In the same skillet that you cooked the bacon in, add butter over medium heat. Once the butter melts add egg. Cook egg for 2 minutes, and then flip over and cook for another 45 seconds. Season with salt and pepper, then remove from the pan and put on a plate.
- Layer the sandwiches: Place one slice of bread, buttered side down, in a skillet [preferably non-stick.] Top bread with half of the shredded cheddar, bacon, and the rest of the cheddar cheese. Then, place egg, tomato, avocado, Swiss or mozzarella slice, and top with the second slice of bread. Butter the top.
- Cook sandwiches over medium heat until bread is golden brown and crisp on the bottom [about 4-5 minutes]. Then carefully flip over, gently flatten with a spatula and cook for another 3 or so minutes until golden brown and the cheese is melted. Slice, serve and enjoy!
