Come on—have you ever met a grill cheese sandwich you didn’t like? Neither did we. Warm bread with a crisp, buttery exterior…gooey cheese center…what’s there not to love?

This Breakfast Grilled Cheese takes the classic sandwich to an ultimate level.  For starters, it includes two different types of cheese, plus an egg with a soft, runny egg yolk. Then it’s topped with a couple of slices of bacon [who doesn’t like bacon?] and finished off with tomato and avocado.

The result is an ultimate grilled cheese sandwich that’s perfect for breakfast, lunch, or brunch!

Some pro tips to get you started

The beauty of grilled cheese is that you can truly have it your way.  This recipe uses shredded cheddar and Swiss. But you can easily switch out for any one of your favorite cheeses—Munster, American, Gouda, Mozzarella, Provolone—totally up to you.

The egg is prepared “over easy.” However you could substitute scrambled eggs or fried egg if that’s your preference.

Bread? Sure, sandwich bread works.  But why not consider Artisan Bread or Texas Toast? Thicker bread helps hold all those delightful fillings much better.  Be sure to butter generously; that’s important for a crispy exterior. 

Now the cooking part. Cooking grilled cheese takes a bit of patience.  Keep your heat on medium to medium low to give the cheese time to fully melt while the bread gets golden and crisp.

Breakfast Grilled Cheese

Here’s an Instagram-Worthy spin on a classic favorite that’s perfect for breakfast, lunch and brunch.


  • 2-3 bacon slices
  • ½ tbsp butter [plus more to spread on sandwiches]
  • 1 egg
  • 2 slices artisan bread
  • ¼ cup shredded cheddar cheese
  • ½  tomato, sliced
  • ½ avocado, sliced
  • Salt and pepper to taste
  • 1 slice Swiss or mozzarella cheese


  1. Cook the bacon and drain on a paper towel-lined plate. Wipe out pan but leave about ½ tsp of bacon grease.

  2. In the same skillet that you cooked the bacon in, add butter over medium heat. Once the butter melts add egg. Cook egg for 2 minutes, and then flip over and cook for another 45 seconds. Season with salt and pepper, then remove from the pan and put on a plate.

  3. Layer the sandwiches: Place one slice of bread, buttered side down, in a skillet [preferably non-stick.] Top bread with half of the shredded cheddar, bacon, and the rest of the cheddar cheese. Then, place egg, tomato, avocado, Swiss or mozzarella slice, and top with the second slice of bread. Butter the top.

  4. Cook sandwiches over medium heat until bread is golden brown and crisp on the bottom [about 4-5 minutes]. Then carefully flip over, gently flatten with a spatula and cook for another 3 or so minutes until golden brown and the cheese is melted. Slice, serve and enjoy!
