Roasted Carrots with Maple Tahini Miso Glaze


Did you say easy veggie side dish that’s dressed to impress? Yes!
Lightly caramelized in the oven, these roasted carrots get a glow up with maple syrup, miso and tahini glaze. It’s sweet, creamy, savory, a little salty and packed full of umami. Even better, it takes just 30 minutes to make -- and most of that is cooking time!

Miso is a thick paste traditionally made from soybeans that have been fermented. It’s

very popular in Japanese and other Asian cuisines. Miso is typically salty with a subtle tanginess that comes from the fermentation process. This recipe uses white miso paste, which has a milder flavor. You can also use red miso paste, but the flavor will be stronger and saltier.

Tahini is toasted sesame seeds ground down to a paste. It’s a common ingredient in Mediterranean and Middle Eastern cooking, blended into dips like hummus and baba ghanoush.

You can easily find white miso and tahini in the international aisle of your supermarket.

You can substitute honey or agave for the maple syrup. Prefer a more savory sauce? Just add a little soy sauce, according to taste.

This glaze also works well on other roasted vegetables, such as broccoli, parsnips, or sweet potatoes.

Roasted Carrots with Maple Tahini Miso Glaze

Prep time: 10 minutes
Cook time: 20 minutes
Servings: 4

ingredients

  • 1 lb. carrots
  • 1 Tbsp white miso paste
  • 1 Tbsp maple syrup
  • 1 Tbsp tahini
  • 1 Tbsp water
  • olive oil
  • salt

Instructions

  1. Preheat oven to 425 degrees F.
  2. Wash, peel, and slice carrots diagonally into about 2 inch long pieces. Toss with a drizzle of olive oil and sprinkle with a pinch of kosher salt.
  3. Place carrots on a baking sheet and bake for 20 minutes or until carrots are soft.
  4. While carrots are roasting, mix tahini, miso, maple syrup, and water.
  5. When carrots are cooked for about 15 minutes, remove baking tray from the oven and brush each carrot with the glaze, then flip over to glaze the other side. Place it back in the oven for an additional 5-7 minutes to finish cooking the carrots and caramelize the glaze. Then remove from the oven and garnish with toasted sesame seeds and scallions.
