This cool and colorful convection combines creamy Greek vanilla yogurt, berries, granola, and a drizzle of honey. You whip up a quick yogurt-berry mixture, spoon it onto a parchment-lined cookie sheet, then add toppings like granola, oats and more fruit for color and crunch. Pop it in the freezer for a few hours, and you’ve got yourself the perfect treat for snacks, dessert or even breakfast.
The best part? You can totally make it your own! Swap out some berries for tangy kiwis or mandarin orange slices. Add some coconut flakes, cacao nibs, or nuts for extra texture. You can even add a drizzle of maple syrup, honey, or chocolate sauce for extra sweetness. The choices are endless.
Why we love these ingredients
You’ve heard us sing the praises of Greek yogurt and for good reason: compared to ordinary yogurt, Greek Yogurt contains twice as much protein per serving as regular yogurt. And let’s not forget that it’s loaded with gut-friendly probiotics!
Greek yogurt also provides a significant amount of calcium, which is important for healthy bones. It’s also believed to help lower cholesterol and triglyceride levels, which can reduce your risk of heart disease.
Just how healthy are berries? Let us count the ways! First, berries are a great source of such potent antioxidants as anthocyanins, ellagic acid, and resveratrol, which protect your cells and reduce disease risk. Second, their high levels of fiber help increase feelings of fullness and support overall digestive health.
Finally, research shows berries can improve blood sugar and insulin levels, protect memory health, and may even reduce inflammation throughout the body.
Pro tips for easy prep
It may be tempting to use low fat yogurt. However, low fat types will tend to become icy when frozen. Full fat yogurt delivers a better taste and creamier, more ice-cream like texture. If you want to avoid dairy, you can also opt for plant-based yogurts like Coconut Cult Probiotic Yogurt or Siggi's Plant-Based Yogurt then sweeten it up with a hint of honey or agave.
Chop everything small. Chopping larger fruits to be about the size of blueberries helps with cutting the bark.
Be sure to line your baking sheets with parchment paper or waxed paper before adding the yogurt mixture. This will help you remove the bark easily from the tray. Otherwise, the yogurt will freeze to the bare tray and it will be difficult to cut and serve.
It will take about 3 to 4 hours for the bark to fully set. You can even prepare it the day before to enjoy with your guests the following day.
